Traditional Vietnamese Recipe - Phở Chiên Phồng (Crispy fried pho noodles with Beef)

Phở Chiên Phồng (Crispy fried pho noodles with Beef)





Ingredients

500 g Fresh Pho rice noodle sheets (You can buy or make your own)

300 g Beef tenderloin

50 g Carrots

50 g of Cabbage

50 g Onion

50 g of Leeks

50 g of Celery

30 g Tomatoes

15 g Spring Onions

10 g of Garlic

10 g of Fried Shallots

5 g of Sugar

15 ml Oyster sauce

10 g Seasoning powder

10 g Pepper

200 ml cooking oil










Instructions


To make this dish, you need access to fresh sheets of Pho noodles. They can be bought or ordered from Vietnamese food stores, or you can make your own. Stack 3-4 sheets of noodles on top of each other and cut into 4 x 4cm squares. You now should have squares of noodles 4x4cm that are 3-4 sheets thick.

Wash the beef, pat dry, and slice it thinly and place in a bowl. Add 1 tsp of sugar into the bowl, stir well, let it soak for 10 minutes (Pre-marinating the sugar will help the meat be tender and richer). Then marinate the meat with 1 tsp seasoning powder, 1 tsp oyster sauce, 1 tsp pepper. Leave for 30 minutes to absorb.


Peeled carrots, and thinly slice into rings

Onions peeled, washed, thinly sliced against the grain.

Leeks, celery, scallions remove roots, wash, cut into 4cm long pieces

Tomatoes washed, and cut into 6 wedges.

Garlic peeled, smashed, chopped roughly.


Boil 200 ml of cooking oil in a deep pan, dip a dry chopstick in the middle of the oil pan, see the oil bubbling around the chopsticks, it means the oil is hot enough.

Slowly lower each pho square into the oil pan, fry until the noodle is puffy and golden on both sides, take out the noodle and place it on a plate lined with oil-absorbent paper. Note that you should not put many pho noodles in the frying pan at the same time because the squares will stick together.


Remove the oil from the pan used to fry the pho noodles, keep about 2 tablespoons (30 ml) of cooking oil, turn on the stove to the highest heat setting.

Place ½ of the onion and garlic in the pan, fry until fragrant, then add the beef and stir-fry quickly until the meat is cooked, remove to a plate, set aside.

Add 2 tablespoons of cooking oil to the pan, add ½ of the onion, minced garlic and stir, until the onion is soft and the garlic is fragrant. Add the vegetables and carrots and stir for about 2 minutes until the vegetables are cooked..


Add 1 teaspoon of seasoning powder, 1 teaspoon of oyster sauce, 1 teaspoon of pepper to the pan, stir well, then add tomatoes and green onions and stir-fry for about 30 seconds - 1 minute. Put the beef in the pan, stir until the meat and vegetables are completely cooked, turn off the heat. Season to taste.


Using a large plate, arrange fried pho on a plate, pour fried meat and vegetables on top, serve hot with chili sauce.
