Vietnamese Street Food - Black Sesame Seed & Peanut Dessert

Want a desert for your next dinner party, that will seriously blow the mind away, then this is it!

This shiny black sweet soup is one of the few foods of this colour in world cuisine.

Ingredients:

250g toasted black sesame seeds

200g roasted unsalted peanuts

200g raw (demerara) sugar

250ml water

400ml of coconut milk

2 Pandan leaves or pandan essence 5ml

Instructions:

Put the sesame seeds and peanuts in a food processor and chop until the mix is finely ground.

Meanwhile put the raw sugar and 250ml of water in a saucepan over low heat. Gently bring the syrup to the boil, stirring occasionally.

Add the ground sesame and peanuts along with 350ml of coconut milk and the pandan.

Cook the soup, stirring occasionally for 5 minutes or until it thickens. Remove the pandan leaves if you used them.

Spoon the soup into six bowls and garnish with the remaining coconut milk.
